Oh man my bad. I underestimated the interest level in this post haha
This is kind of my default stir fry meal, which basically entails throwing whatever veggies are in the fridge into a pan + some tilapia over rice.
For the veggie stir fry: Heat up the skillet/pan/wok/whatever at medium heat with olive oil and onions until the onions are browned. Add chopped baby bella mushroom, broccoli, yellow squash. Add more oil & water as needed for steaming. Halfway through (depends on how crunchy you like your veggies) add sauce- I did a liberal half/half mix of soy sauce + bbq sauce….. trust me.
For the tilapia: heat olive oil + scallions + white onion in a skillet until onions begin browning. Add fish and seasonings- I used light salt and some McCormick’s hamburger seasoning (it’s my default cheater seasoning… really good on omelettes and veggies BTW…. don’t knock it til you try it) Start at low heat and increase slightly if necessary. Flip evenly throughout cooking- done when you can cut easily into fish and see only white flakiness
Serve together over rice with some good bread on the side. BAM.

So I should be at the lake right now with friends in Alabama… but the guy got sick so it was a no go. So long run. Sick of this cold and rain. Caught a break with some sun and blue skies this afternoon WHERE IS MY BLAZING MEMPHIS HEAT AND SUFFOCATING HUMIDITY???

last long run in Tuscaloosa 4-29-13
Can’t believe tomorrow is my last exam in college ever and my family will be here to move me out. Waited out the rain of the weekend (and ok let’s face it, real reason for rescheduling my long run- waiting for the pancake maker to become available) and got in 11 miles this morning. Glorious day, ran the Northport bridge for the last time ever and said my goodbyes.

Not the fastest. I did two intense spin classes one day after the other, so my legs were kind of dead. I pushed it though, and it felt good. Now stick rolling and coffee and micro studying.

Charlottesville Marathon 4/6/2013
First marathon- DONE. A week ago. I took zero week seriously and took time off running and thinking about running. I am really just now mentally prepared to reflect on the race because lol let me tell you
The marathon is no joke. It’s for real. Basically, IT WAS HARDER THAN I THOUGHT.

3/23/2013 my undocumented half marathon PR (1:40:51)
With 2 weeks to go to marathon weekend (!!!!!), I set out today to run 6 miles as quickly as possible to get out of the worst spring break weather ever (WHY YOU GOTTA DO ME LIKE THIS, MEMPHIS????) as quickly as possible. So leaving the house it was raining and terrible.
2 miles in, I am startled to see MY SHADOW… what’s this??? what does this?? THE SUN??? BLUE SKIES APPEARED. BLUE SKIES. I was so overcome with emotion I just decided to go ahead and make this my long run. Basically I just freaked out. I was only scheduled to do a 12 miler this weekend, but I realized I could PR so rolled on to 13.1. An I PR’d. By over 3 minutes.
I PR’D MY HALF MARATHON TIME IN A RANDOM, UNDOCUMENTED TRAINING RUN. Am I happy? Upset? I DO NOT KNOW.
